Three Grain Cereal Banana Muffins

 Three Grain Cereal Banana Muffins



  • 1 cup 3-grain cereal (i.e. Red River Cereal)
  • ¾ cup brown sugar
  • ½ cup rolled oats
  • 1½ cups flour
  • 1 t baking soda
  • 1 t cinnamon
  • ¼ t salt
  • 1 egg
  • ¼ cup melted butter
  • 1¼ cups milk
  • 2 T plain yogurt
  • 1 t vanilla extract
  • 1 large banana, quartered then sliced


  1. Grease, or spray muffin tin with non-stick coating, or line with paper liners, 12 muffin cups
  2. In large bowl, combine dry ingredients.
  3. In a separate bowl, combine liquid ingredients including the banana. Beat to blend. Add to dry ingredients, mixing only slightly
  4. Spoon batter into muffin tin, bake at 350° for 20 minutes.
