Three Grain Cereal Banana Muffins
Three Grain Cereal Banana Muffins
- 1 cup 3-grain cereal (i.e. Red River Cereal)
- ¾ cup brown sugar
- ½ cup rolled oats
- 1½ cups flour
- 1 t baking soda
- 1 t cinnamon
- ¼ t salt
- 1 egg
- ¼ cup melted butter
- 1¼ cups milk
- 2 T plain yogurt
- 1 t vanilla extract
- 1 large banana, quartered then sliced
- Grease, or spray muffin tin with non-stick coating, or line with paper liners, 12 muffin cups
- In large bowl, combine dry ingredients.
- In a separate bowl, combine liquid ingredients including the banana. Beat to blend. Add to dry ingredients, mixing only slightly
- Spoon batter into muffin tin, bake at 350° for 20 minutes.
